Ingredients For Pepper Fry Masala
2 Tablespoon black peppercorns
1 Tablespoon cumin seeds
1 Tablespoon fennel seeds
Ingredients For Mushroom Pepper Fry
2 Tablespoon oil
1 Pinch cumin seed
A pinch fennel seed
15-20 NOS curry leaves
1 Tablespoon chopped garlic
15 Grlic cloves
3 Medium size onion chopped
2 Tablespoon ginger garlic chili paste
1/2 Tablespoon turmeric powder
1/2 Tablespoon garam masala powder
Pepper Spice Mix Half Quantity
As needed hot water
Salt to taste 500 Gram diced mushroom
4-5 NOS green chili
15-20 NOS curry leaves
1/2 Lemon juice
Fresh green coriander chopped
Step:1
Set a small pan over high heat and once it gets hot , lower the flame and add fennel seeds , cumin seeds and black peppercorn , keep stirring and dry roast them over low flame until the cumin seeds turn light brown , then transfer them into a bowl cool them sown completely and grind into a fine powder

Set a fry pan over high heat , add oil and let it get hot

Add cumin and fennel seeds , garlic and curry leaves stir well and cook briefly

Then add the onions , stir and cook over high heat until the onions turn light golden brown , then add the ginger garlic and green chili paste , stir and cook for 1-2 minutes , allow the onions to brown further

Then lower the flame , add turmeric powder , garam masala , pepper fry masala and splash of hot water stir and cook the spices over high flame for 1-2 minutes , then add salt

Once the masala is cooked , add the cut mushroom , stir well and cook over high flame for 4-5 minutes , then cover and cook over low flame for 2 minutes , the mushroom will release all their moisture

Open the lid and cook over high flame until the water gets evaporated , then add the remaining pepper fry masala , green chili , curry leaves , lemon juice and fresh coriander , stir well

Tate and adjust salt if needed and your delicious mushroom pepper fry is ready , serve it hot with some parotta , appam or neer dosa . You can also have this dish as a starter
