Aloo Puri Recipe

Puri aloo is a popular . Nort Indian dish consisting of deep-fried lentil puris served with spicy boiled potato . The puris are made with wheat flour , and spices . They are crispy on the outside and soft on the inside . The potato curry is made with boiled potatoes , onion , tomatoes , and blend of aromatic spices . This delicious and filling dish is often enjoyed for breakfast as a snack . Follow the recipe and let’s make aloo puri recipe

Ingredients

2 Cup wheat flour

Salt to taste

1 Tablespoon carom seed (ajwain)

2 Tablespoon ghee

2 Tablespoon bareek rava (semolina)

As needed water for dough

5-6 Medium size tomato

1 Inch ginger

1-2 Green chili

1 Tablespoon cumin seed (jeera)

1 Tablespoon Mustard see (rai)

1 Tablespoon chopped ginger (adrak)

2-3 Chopped green chili

9-10 NOS Curry leaves

1 Tablespoon asafoetida (hing)

2 Tablespoon gram flour (besan)

1/4 Tablespoon turmeric powder

1/2 Tablespoon garam masala

1 Tablespoon red chili powder

1 Tablespoon coriander powder

5-6 Medium size potato

1 Tablespoon jaggery (Gud)

1 Tablespoon dry mango powder (amchur)

Salt to taste

1/2 Tablespoon kasuri methi

1 Slit green chili

Chopped fresh coriander leaves

As needed oil for frying the puri

Step:1

In a bowl add 2 cup wheat flour , salt to taste , 1 tablespoon carom seeds , 1 tablespoon ghee , 2 tablespoon bareek rava ,

Step:2

Lightly mix every thing , add water gradually to knead a thick dough

Step:3

Knead the dough nicely for 3-4 minutes , apply some ghee on the dough and cover with a damp cloth and rest for minimum for 30 to 40 minutes

Step:4

In grinder jar add 5-6 medium size tomato , 1 Inch ginger , 1-2 NOS green chili , and grind into a fine puree using a mixer grinder , tomato puree is ready keep aside to be used later

Step:5

In a pressure cooker add 1 tablespoon ghee , 1 tablespoon cumin seed , 1 tablespoon musted seed , 1 tablespoon chopped ginger , 2-3 chopped green chili , 8-10 NOS curry leaves , 1 tablespoon asafoetida

Step:6

Stir and cook for 1-2 minutes on medium flame , lower the flame and add 2 tablespoon gram flour

Step:7

Stir and cook until the gram flour turn aromatic or it’s colour changes slightly then add , 1/4 tablespoon turmeric powder , 1 tablespoon red chili powder , 1 tablespoon coriander powder

Step:8

Stir and cook on medium low flame for 2-3 minutes , add the tomato puree , stir and cook on high flame for 2-3 minutes

Step:9

Add , 5-6 medium sized diced potato , 1 tablespoon jaggery , 1 tablespoon dry mango powder , salt to taste , stir well add 400 ml of hot water mix well  , pressure cook for 2 whistles on medium flame

Step:10

Switch off the flame and allow to depressurize naturally ,

Step:11

Stir well and use your spatula to mash some of the potatoes , cook for 3-4 minutes on high flame , check the seasoning and adjust as per taste

Step:12

Add , 1/3 tablespoon garam masala , 1 tablespoon kasuri methi , 1 NOS slit green chili , chopped fresh coriander leaves

Step:13

Let’s make puri , divide the dough into equal size dough balls , now the the a dough ball and apply very little oil to it , roll it into a thin puri ,fry the puri in very hot oil on high flame , fry till golden brown

The aloo puri is ready serve it and enjoy the aloo puri
