Kothimbir Vadi Recipe
Traditional kothimbir vadi is deep fried . But to make it a little healthy , I have shallow fried them . Kothimbir vadi is a delicious savory and crisp snack from the Maharashtrian cuisine .It is made gram flour (Besan) , coriander leaves , peanuts , sesame seed and some spice these savory , herby and flavorful bites can be pan-fried or deep-fry . They are popular at tea time fritter snack loaded with coriander leaves
Ingredients
3 Cup fresh coriander leaves finely chopped
1 Cup basin
Tablespoon chopped ginger half
Tablespoon chopped garlic half
2-3 Chopped green chili
1 Tablespoon sesame seeds
2 Tablespoon roasted peanut powder
Tablespoon red chili powder
1 Tablespoon cumin coriander powder
14 Tablespoon turmeric powder
18 Tablespoon baking soda
As needed salt
1/5 Cup water
As needed oil

In a large mixing bowl take 2 cup of chopped coriander leaves

Also add 1 cup besan

Additionally add 1 tablespoon ginger-garlic paste , 1 green chili , 1 tablespoon red chili powder , 1/2 tablespoon turmeric powder , 1/2 tablespoon coriander powder , 1/2 tablespoon cumin powder , 1/4 tablespoon garam masala powder , 1 tablespoon sesame seed , salt and 1 tablespoon lemon juice

Combine well making sure all the spices are mixed well

Also squeeze and mix making sure the coriander leaves are squeeze well

Furter add water as needed begin to knead

Knead to soft dough

Shape the dough to a cylindrical shape greasing hand with oil

Steam the dough completely and cut them into thick slices
