FAQs

1. What is Kothimbir Vadi?

  • It is a traditional Maharashtrian snack made from a steamed and then fried cake of fresh coriander leaves (cilantro kothimbir) and gram flour (besan), seasoned with spices, sesame seeds, and peanuts.

2. Why is my vadi too soft or breaking while frying?

  • Dough Consistency: The besan mixture should be thick and dough-like, not runny. Add besan gradually until it holds shape.

  • Insufficient Steaming: Steam the log thoroughly until a knife inserted comes out clean about 20-25 minutes Let it cool completely before slicing.

3. Can I bake or air-fry Kothimbir Vadi instead of deep-frying?

  • Yes. After steaming and slicing, brush the slices with oil and air-fry at 180°C 350°F for 10-12 minutes, flipping halfway, until golden and crisp.

  • You can also bake them on a greased tray at the same temperature until crispy.

4. How long does it stay fresh, and how should I store it?

  • Fried Vadi: Store in an airtight container at room temperature for 2-3 days. Reheat in an air fryer or oven to restore crispness.

  • Steamed Log: Wrap and refrigerate for up to 3 days; slice and fry as needed.

5. Can I make it without peanuts or sesame seeds?

  • Yes. You can omit them or substitute with other nuts like crushed cashews.

  • For a nut-free version, add roasted chana dal or simply rely on the besan and spices for texture and flavor.
