1 Tablespoon white pepper powder

1 Tablespoon jeera powder

1 Tablespoon chaat masala

1/2 Tablespoon coriander powder

1/2 Tablespoon black salt

1/4 Tablespoon kasuri methi

1/4 Tablespoon black pepper

Salt to taste

2 Tablespoon Punjabi mango achar (for achari soya chap)

For Skewering

Skewers

1/2 Cup onions

12 Cup capsicum

Achari Masala Powder

1 Tablespoon mustard seeds

1 Tablespoon cumin seeds

1 Tablespoon fennel seeds

1/2 Tablespoon kalonji

1/2 Tablespoon methi seeds

1/2 Tablespoon ajwain

2 Tablespoon Kashmiri red chili powder

2 Tablespoon aamchur powder

Step:1

Am using the canned soya chap , you can use frozen chap as well , remove the stick from the chap and fry in hot oil on medium high flame until crisp and golden brown . Cut the fried chap in 2-3 pieces and keep aside for marinating

Step:2

As am doing 2 different marination , once is afghani and one is achari , i’ll divide the soya chap by putting 6 sticks in afghani abd reaming 6 in achari . Youcan make any of the marination as per your preference

Step:3

For afghani marination , add all the ingredients of marination except the Punjabi mango achar and whisk well , add the fried soya chap pieces and mix well , marinate for 15-20 minutes

Step:4

For ahari soya chap , just add 2 tablespoon of Punjabi mango achar masala (if you’re adding the with the masala) and mix it with the afghani marinade made , and further marinde the soya chap for the same time . You can also use the regular achar masala or the achar powdered ,masala , along with achar masala add little mustard oil as well for the flavour

Step:5

After marinating for 15-20 minutes , take a skewer the marinated soya chap along with some diced capsicum and onion petals , if you’re having bamboo skewers make sure to soak them in water for at least 30 minutes

Step:6

Once skewed , cook them on open flame to get the charred texture , apply melted butter all over the chap for that distinct flavour and recook them briefly on open flame

Step:7

If you’re having over at home , you can simply avoid the step of frying the soya chap and simply marinate the soya chap pieces and cook them in a preheated over at 200 for 7-8 minutes or until you get charred texture over the chap

Step:8

You’re afghani soya chap/achari soya chap is ready . You can serve at the stage as well with the dahi wali hari chutney . But i would suggest you to add few more ingredients just to elevate the elegance of the dish
