Ingredients For Sauted Vegetables
1 Tablespoon oil
1 Tablespoon ginger (chopped)
1 Tablespoon garlic (chopped)
2 NOS green chili (chopped)
2 NOS green chilies (chopped)
1/3 Cup carrots (chopped)
1/3 Cup French beans (chopped)
1/3 Cup green peas (boiled)
1/3 Cup sweet corn (boiled)
1/3 Cup capsicum (chopped)
For Making The Lollipops
4-5 Medium size potato (boiled and grated)
1 Tablespoon Kashmiri red chili powder
1 Tablespoon coriander powder
1 Tablespoon cumin powder
1/4 Tablespoon Turmeric powder
A pinch black salt
1 Tablespoon dry mango powder
1 Tablespoon garam masala
1/2 Tablespoon kasuri methi
1 Tablespoon fresh coriander (chopped)
1 Tablespoon fresh mint (chopped)
Salt to taste
A pinch black pepper powder
As needed breadsticks
For coating and frying
1/4 Cup refined flour
A pinch salt
As needed water
As needed panko breadcrumbs
Step:1
In a pan add oil along with ginger , garlic and green chilies stir and cook on high flame for a minute . Further add carrot and the remaining vegetable , toss and cook the vegetable on high flame for 2-3 minutes , make sure that you don’t overcook the vegetable , they should remain crunchy

Now remove the vegetable in a bowl and let them cool down completely . To make the mixture , add potatoes in ;arge bowl followed by sauted vegetable , spices , coriander , mint salt and black pepper powder

Mix all the ingredients well with help of your hands , if you fell like there is too much of moisture in the mixture because of the potatoes you can add breadcrumbs as per requirement to bind the ingredients together

Once all the ingredients have combined well the mixture will be ready for shaping . There are 2 methods of shaping , the mixture will be ready for shaping

There are 2 methods of shaping , the first one requires ice cream sticks and the second one requires breadsticks that are that are easily available in the market
Method 1- Take a spoonful of the mixture in your hand and press an ice cream stick in the bottom half of the mixture , press and make a lollipop shape of the mixture around the ice cream stick , the lollipop is ready to be coated and dried
Method 2- Take a spoonful of the mixture in your hand and make roundel of it by applying pressure withing your hand and rotating the mixture continuously

To coat the lollipop , you’ll need to make a slurry by whisking flour , salt and water in a separate bowl along with the slurry you will also need panko breadcrumbs

Once you have the coating components ready dip the lollipop in the slurry first and then coat them with panko breadcrumbs , with the ice cream stick version you just have to dip and coat the mixture part by holding the ice cream stick

For frying ,hear oil in a deep pan or a kadhai until its medium hot then carefully drop the coated lollipop in hot oil . Fry the lollipop while lightly stirring them at intervals until crisp and golden brown , remove them using a spider and place them on a pepper towel lined bowl or a plate

Break the breadsticks into equal halves and insert them into the round shaped lollipop . Your 2 different versions of lollipop are ready . Serve them with some schezwan sauce and green chutney
