Ingredients For Broth

2-3 Tablespoon oil

4 NOS onion

2 NOS carrot

2 Stalks

4 Inch ginger (sliced)

6-7 Garlic cloves (sliced)

100 Gram button mushroom

1 NOS apple

6 NOS shitake mushroom

4 Liter water

1 Tablespoon black peppercorns (crushed)

Salt to taste

Step:1

Set a large stock pot on high heat and once it gets hot add in the oil

Step:2

Once the oil gets hot add onion , carrot , celery , ginger and garlic , stir and cook over high flame for 3-4 minutes until the veggies get charred

Step:3

Further add button mushroom , apple and shitake mushroom , stir and cook for 2-3 minutes

Step:4

Then add water and crushed black peppercorn and bring the stock to a boil

Step:5

Once the stock comes to a boil , lower the flame to medium low and let the stock simmer for 1.5-2 hours , while the stock is simmering you can start preparing other components , make sure you keep discarding the scum that floats on the surface of the stock at regular intervals

After cooking the stock for 2 hours you’ll notice that it would have reduced a little , your stock is ready at this point

Step:7

Strain the stock into another stock pot using a sieve and reserve the shitake mushroom to use it as a topping if you have added them

Step:8

Finally taste and adjust the salt , you have to keep the stock a little under seasoned because you’ll be using soy sauce to season it while assembling the ramen bowl . Your Vegan Broth Is Ready

Ingredients For Chili Oil

1/2 Cup chili flakes

2 Tablespoon soy sauce

1/2 Tablespoon sugar powdered

1.5 Cup oil

3 NOS star anise

2 Inch cinnamon stick

3 Tablespoon chopped onion

2 Tablespoon chopped garlic

Step:1

Add the chili flakes , soy sauce and powdered sugar into a heatproof bowl , mix it well and set it aside

Step:2

Further add the oil into a pan and heat it until it reaches 120C , then add in the star anise , cinnamon stick , onion and garlic , stir well and fry the onion and garlic over medium flame until they get light golden brown and crispy

Step:3

Once the onion and garlic turns slightly light golden brown , remove the pan from the flame and care fully pour the hot oil over the chili flakes mixture you prepared earlier , make sure you remove the cinnamon and star anise from the oil

Step:4

Transfer it into an air tight glass container once it reaches room temperature . Your chili oil is ready

Ingredients For Tofu

1 Tablespoon oil

1 Tablespoon ginger garlic chili paste

200 Grams tofu (cubes)

Salt to taste

A pinch black pepper powder

A pinch chili flakes

1 Tablespoon soy sauce

Step:1

Set a wok on high heat and once it gets hot add add the oil

Step:2

Once the oil gets hot add the ginger garlic chili paste and stir it , further add the tofu and all the remaining ingredients

Step:3

Toss the tofu over high flame for2-3 minutes then transfer it into a bowl . You tofu for ramen is ready

Ingredients For Bok Choy

1 Tablespoon oil

As needed bok choy

A pinch of salt

A pinch black pepper powder

Step:1

Set a wok on high heat and once it gets hot add the oil

Step:2

Once the oil gets hot add the bok choy cook it until gets charred

Step:3

Transfer the charred bok choy into a plate and season it with salt and pepper . Yor charred bok choy is ready

Ingredients For Noodles

Salt to taste

Ramen noodles

Step:1

Boil water in a stock pot for the noodles and season it with salt

Step:2

Once the water comes to a boil add in the noodles and boil them for 3-4 minutes or as per the instructions on the package

Step:3

Once boiled , transfer them into cold water to stop the cooking process and then strain them using a sieve . Your noodles are ready

Ingredients For Assembly

1 Tablespoon soy sauce

1 Tablespoon powdered sugar

1 Tablespoon chili oil

Vegan broth

Noodles

Bok Choy

Shitake mushroom (sliced)

Sweet corn (boiled)

Tofu

Spring onion green

Sesame seeds

Chili oil

Step:1

To assemble your ramen bowl , add soy sauce powdered sugar and chili oil into the bowl and stir it

Step:2

Further add the vegan broth and noodles ,make sure that the broth is boil hot

Step:3

Place the toppings per your preference and garnish with some chopped spring onion green , sesame seeds and chili oil . Your vegan ramen bowl is ready serve it and enjoy
