Veg Pulao Recipe

Veg Pulao is a fragrant and flavorful one-pot rice dish made by cooking basmati rice with a mix of fresh vegetables and aromatic whole spices. Ingredients

2 Cup basmati rice

As needed water

1 Tablespoon oil

2 Tablespoon ghee

Whole Spices

1/2 Tablespoon cumin seeds

3 NOS green cardamom

1 NO black cardamom

1 Inch black cardamom

1 Inch cinnamon

4-5 NOS cloves

4-5 NOS black peppercorns

2 NOS bay leaf

2 NOS onion (sliced)

2 Tablespoon ginger garlic green chili paste

1 NO tomato (sliced)

Salt to taste

Hot water a splash

Powdered Spices

1/2 Tablespoon turmeric powder

1 Tablespoon red chili powder

2 Tablespoon Kashmiri red chili powder

1 Tablespoon coriander powder

Hot water a splash

3/4 Cup curd

1 Tablespoon biriyani masala

2 NOS potato (diced)

1 NOS carrot (diced)

1/2 Cup French beans (chopped)

1/3 Cup green peas

A large handful fresh coriander

2 Tablespoon mint (chopped)

As needed salt

4 Cup water

 Step:1

Add the basmati rice in a large bowl and wash it well with water until it runs clear , then add fresh water and let the rice soak for 30-45 minutes . To make the masala for the pulao set a flat bottomed vessel over high heat and add oil and ghee , let the oil get hot then add all the whole spices along with onions , stir well and cook over medium high flame until the onions turn light golden brown

 Step:2

Further add ginger garlic green chili paste , tomato and salt , stir well and cook over high flame for 2-3 minutes , you can add a splash for hot water if the masala gets too dry

 Step:3

Once the tomatoes have cooked , lower the flame and add in all the powdered spices , spices , stir well and immediately add a splash of hot water and cook over medium flame for 1-2 minutes

 Step:4

Further add biryani masala to the curd and whisk it well do that no lumps remain and then add the curd into the masala , stir well and cook for a minutes

 Step:5

Then add potato , carrot , French beans , green peas , fresh coriander and mint , stir well and cook until the potatoes are half cooked . Once the potatoes are half cooked , taste the masala and adjust the salt and spiciness , it should taste slightly saltier and spicier than usual to balance the flavours after the rice is added

 Step:6

Further discard the water in which the rice was soaked and add the soaked rice to the vessel along with fresh water and stir very gently and bring it to a simmer . Once the pulao comes to a simmer , cover the vessel with a lid and cook the pulao over medium low flame for 10 minutes

 Step:7

Once cooked for 10 minutes , remove the lid and check the pulao by inserting a spatula from the side to see if there’s water , if water has dried completely then switch off the flame or else cook the pulao for 2-3 minutes more

 Step:8

Once cooked let the pulao rest for 5-10 minutes before serving then serve it by mixing the pulao from the side and not the middle . Your delicious veg pulao is ready , accompany it with some fresh raita and papad . And enjoy the delicious Veg Pulao
