Kothimbir Vadi Recipe
Kothimbir Vadi is a savory and aromatic Maharashtrian snack made from fresh cilantro kothimbir and chickpea flour, seasoned with green chilies, ginger, and spices. The mixture is steamed, sliced, and then pan-fried until crisp on the outside while remaining soft inside. Often enjoyed with tangy tamarind or green chutney, this tea time delicacy is a flavorful and traditional treat that highlights the fresh, herbal taste of cilantro in a satisfying, bite sized form

Green Chutney Ingredients
1 NO coconut (Scraped)
Fresh coriander a few leaves
2-3 NOS green chili
1 Inch ginger
1/2 Lemon juice
2 Tablespoon sugar
Salt to taste
As needed water
Step:1
In a mixer grinder jar add the coconut along with all the remaining ingredients , make sure you don’t add a lot of water . Grind everything into a coarse chutney . Your quick and delicious is ready vadi
Ingredients
100 gram fresh coriander
10 cloves garlic
3 NOS green chili
1 Tablespoon cumin seeds
A pinch salt
120 Gram flour
1/4 Cup rice flour
2 Tablespoon white sesame seeds
Salt to taste
1/4 Tablespoon turmeric powder
1/4 Tablespoon spicy red chili powder
2 Tablespoon oil
60 ml water (added gradually)
As needed sesame seeds
Step:1
To make the vadis you’ll first need to sort , wash and clean the coriander , make sure you oat dry the coriander after washing , it needs to be dry . Further chop the coriander roughly and add it into a large bowl

Then make a coarse paste by grinding green chilies , garlic and salt . Add the paste to the fresh coriander and mix it well . Further add gram flour , rice flour , white . Sesame seeds , salt , turmeric powder , spicy red chili powder and oil , mix it briefly to mix all the ingredients

Gradually add the water and combine everything to make a dough , it should not be to stuff not too soft . Grease a tray or plate with oil and drizzle some white sesame seeds on it

Place the dough and shape it to form 1 inch thick slab then drizzle some more white sesame seeds on the top . Steam the mixture for 12-15 minutes over medium high flame . Once steamed , take tray out of the steamer and let it cool down

Then remove the vadi slab from the tray using a spatula and cut it into squares or rectangle as per your size preference . Further fry them in moderately hot oil until golden brown , you can also shallow fry them , remove them into a sieve once fried . Your kothimbir vadi are ready
