Chili Idli And Masala Idli Recipe
Chili Idli and Masala Idli are two popular and flavorful twists on traditional South Indian steamed idlis, transforming them into exciting snacks or meals. Chili Idli involves frying idli pieces and tossing them in a tangy, spicy Indo Chinese sauce with onions, bell peppers, and soy sauce. Idli Chili Ingredients
4-5 NOS leftover idlis
For Batter:
1/4 Cup refined flour
1/2 Cup cornflour
Salt to taste
A pinch black pepper powder
1 Tablespoon ginger garlic paste
As needed water
For Tossing
2 Tablespoon oil
1/4 Cup onions (chopped)
4 Tablespoon garlic (chopped)
1 Tablespoon ginger (chopped)
3-4 NOS green chilies (slit)
250 ml hot water/vegetable stock
1 Tablespoon light soy sauce
1 Tablespoon dark soy sauce
1 Tablespoon green chili paste
1 Tablespoon vinegar
1/4 Cup spring onion bulbs
1/2 Cup onions
1/2 Cup capsicum
A small handful of fresh coriander
A pinch sugar
Salt to taste
A pinch white pepper powder
1 Tablespoon corn starch +50 ml water
A handfu spring onion
Step:1
Cut the leftover idli in strips and keep aside . For batter , take a mixing bowl and add , refined flour , corn flour , salt and black pepper powder to taste , ginger garlic paste , add water in batches as much as needed , mix well to make a lump free batter the consistency of the batter should not be too thick or too thin , it should be thick enough to coat the idlis well

Set oil for frying , coat the idli with the batter and drop in hot oil , deep fry on medium high heat until crisp and light golden brown in colour . Fry in batches do not over crowd while frying

Set a wok on high heat , add oil and let it heat nicely now , add onions , ginger , garlic and green chilies , stir and cook on high heat for a minute . Add the vegetable sock and stir well on high heat

Further add the sauce , capsicum , onions and spring onion bulbs , stir and cook for a minute . Add freshly chopped coriander , leaves , sugar , salt and white pepper powder , stir and cook for a minute

In a separate small bowl , mix corn flour and water to make a smooth lump free slurry , add the slurry , mix well and cook until the sauce thickens . Now add the crispy fried idlis and stir gently so it gets coated well with the sauce . Finish by adding some freshly chopped spring onion greens . Idli chili is ready , serve immediately with some schezwan sauce on side

Idli Tawa Masala
As needed left over idlis
2 batter + 1 tablespoon oil 1
1 Tablespoon cumin seeds
1-2 NOS green chilies (chopped)
1-2 Medium size onions (chopped)
4 Tablespoon red chili paste
3 Tablespoon garlic paste
1/4 Tablespoon turmeric powder
1 Tablespoon red chili powder
1 Tablespoon pav bhaji masala
1/2 Tablespoon garam masala
1 Medium size capsicum (chopped)
3 Tomatoes medium size (chopped)
A needed hot water
1 Cup tomatoes (chopped)
Salt to taste
1 Tablespoon lemon juice
A handful coriander leaves (chopped)
1 Tablespoon kasuri methi
Step:1
Cut the idlis in quarters and keep aside . Set a pan on medium heat , add butter and oil , further add jeera allow it to crackle , further add green chilies and onions , stir and cook until the onions are translucent . Further add , red chili paste , garlic paste , turmeric powder , red chili powder , pav bhaji masala and garam masala , stir and cook well on medium flame until the oil released

Add capsicum , tomatoes and salt to taste , cook nicely for 3-4 minutes or until the tomatoes are mushy , add some hot water if the masala tends to dry . Stir well and cook for 1-2 minutes . Add the idlis and mix gently , make sure the masala coats the idli well

Add some lemon juice , kasuri methi and finish with some freshly chopped coriander leaves , stir once and the idli tawa masala is ready to serve serve immediately
