Veg Schezwan Rice Recipe

Veg Schezwan Rice is a fiery and flavorful Indo Chinese dish featuring cooked rice stir-fried with finely chopped vegetables and a bold, homemade Schezwan sauce. Cooked Chili Paste Ingredients

10-15 NOS Kashmiri red chili (soaked)

4 Tablespoon oil

Step:1

For making the chili paste , transfer the soaked Kashmiri red chili in a grinding jar and grind to make fine paste . Use very little water if needed while grinding

Step:2

Heat the wok really well , add oil and let the oil heat a little bit , further add the prepared Kashmiri chili paste , and cook it well on high flame until the oil separates . Make sure to stir while cooking the paste

Step:3

Once the oil separates , switch off the flame and cool down to room temperature , transfer the cooled down chili paste in a well sterillized jar , your cooked chili paste is ready . Keep it refrigerated and use accordingly

 

Cooked Rice Ingredients

1 Cup sella basmati rice

Water for cooking rice

A large pinch salt

Step:1

Wash the rice 3-4 times or until the water is clear , further soak the rice for minimum 15 minutes

Step:2

After soaking , set water for boiling in a stock pot , make sure the water is boiling and then add the soaked rice and salt , stir once and further lower the flame after few seconds , cook the rice on medium heat until the rice is almost cooked make sure not to cook the rice completely

Step:3

Check for the doneness of rice by taking few grains press it with fingers and the rice should be squished and not mashed . You can also check by eating one grain

Step:4

Once it’s almost cooked , use a sieve and drain the water , let the rice rest in sieve for few minutes to drain the extra water if any

Step:5

Use a fork and fluff up the rice to stop the further cooking process , further use a big size flat vessel and spread the rice to fasten the cooking process , you can also keep the cooked rice in the fridge and use it later

 

Schezwan Fried Rice Ingredients

1 Tablespoon oil

1/4 Cup onions chopped

2 Tablespoon garlic chopped

1 Inch ginger chopped

1 Tablespoon green chili

1 Tablespoon coriander stems chopped

1/3 Cup carrots chopped

1/3 Cup French beans chopped

1/4 Cup spring onion bulbs chopped

Cooked rice

Salt to taste

A pinch white pepper

A pinch sugar

1 Tablespoon vinegar

1 Tablespoon cooked red chili paste

1 Tablespoon ketchup

A handful spring onion green

Step:1

Seta wok on high heat , let the nicely , add oil and swirl the wok to coat it well with the oil m add onions , garlic , ginger , green chilies and coriander srems , stir and cook on high flame for a minutes

Step:2

Further add the carrots , French beans and spring onion bubls , stir and cook on high flame until the veggies are just cooked and they are crunchy as well

Step:3

Now , add the cooked rice , salt , white pepper sugar , vinegar , cooked red chili paste , ketchup and spring onion greens , stir gently and mix well , cook on high flame foe a minutes

Step:4

Finish by adding a handful of spring onion green , your schezwan fried rice is ready , serve hot with schezwan sauce and any chinese gravy of your choice
