Veg Sizzler With Pepper Sauce Recipe

Ingredients For Garlic Sauce

4 Tablespoon butter

4 Tablespoon refined flour

1-1.5 Liter hot water

1 NOS veg stock cube

1 Tablespoon chopped celery

1 Tablespoon chopped garlic

1 Tablespoon garlic paste

Green chili sauce

2 Tablespoon green chili sauce

2 Tablespoon sugar

1 Tablespoon dark soy sauce

Salt to taste

1 Tablespoon black pepper freshly crushed

Step:1

Set a sauce pan on high flame , add butter , allow it to melt and further cook until its brown in colour

Step:2

Then add maida , stir and cook the maida for for 4-5 minutes on low flame , further add hot water gradually while stirring continuously to avoid any lump formation , then add the stock cube and stir well

Step:3

Further add celery , chopped garlic , garlic paste and all the remaining ingredients of the sauce stir and cook on high flame for 7-8 minutes , make sure to use black pepper that’s freshly crushed for best result

While cooking the sauce , scum/front will form on top remove it with a spoon , cook until the sauce reduces and coats the back of te spoon micely . The garlic pepper sauce is ready , keep aside to be served later with other components over the sizzler pa

Charred Onions

2 Tablespoon oil

4 Medium size onion thick slices

A pinch salt

Step:1

Set a pan on high heat , add oil and let it get hot , then add the onion and salt , stir once and let the onion char (dark browning) for couple of minutes on high flame for one side

Step:2

Further stir and char from other side as well . Your charred onions are ready

Veggies

1 Tablespoon oil

1 Tablespoon butter

1 Tablespoon chopped garlic

200 Gram Mushroom Quarters

A pinch salt

1 Large capsicum thick julienne

1 Large carrot batons

10-12 NOS fresh beans

1/2 Cup broccoli florets

A large pinch black pepper

Salt to taste

A pinch sugar

A pinch red chili flakes

Step:1

In the same pan that you used to make the onion add oil and butter , let it get hot and then add garlic , mushroom , salt and stir well and cook over high flame until the mushroom release their moisture and let that moisture evaporate , the mushroom will get dlightly brown during this process

Step:2

Next , add all the remaining veggies with salt , sugar and red chili flakes , stir well and cook all the veggies over high flame for 4-5 minutes , they should get cooked but still retain their crunch . The sauteed veggies are ready

Additional Components For Assembly

Cabbage roughly cut

1 Cup boiled sweet corn

4 Cup cooked sella basmati rice

As needed French fries

Step:1

Set a sizzler pan on highest flame possible , heat it really well for a couple of minutes , be very careful while handing the sizzler pan , use 2 tongs if needed

Step:2

Set the hot sizzler pan in the wooden case using 2 tongs for the assembly . Spread a bad of cabbage leaves over the hot sizzler pan place the cooker rice , then add a portion of the stir-fried veggies , charred onion , french fries , sweet corn and french fries on the side

Step:3

Then pour hot garlic pepper sauce over all the components . Garnish it by grating sme processed cheese and serve more sauce on the side
