Sweet Corn Dhokla Recipe
Light, fluffy, and subtly sweet, our Sweet Corn Dhokla reinvents the traditional steamed snack by blending the freshness of sweet corn with the soft, spongy texture of dhokla. A perfect harmony of flavors, this dish combines grated sweet corn with besan gram flour and a hint of ginger green chili paste, fermented to airy perfection, then tempered with mustard seeds, curry leaves, and a sprinkle of coconut for extra richness
Ingredients For Dhokla
1 Cup upma rava
1/2 Cup sour curd
3/4 Cup water
1/2 Tablespoon sugar optional
Salt to taste
1.5 Cup sweet corn
2 Inch ginger
3 NOS green chili
1/3 Cup sweet corn
1/2 Tablespoon turmeric powder
1/2 Tablespoon red chili flakes
1/2 Tablespoon oregano
1 Tablespoon peanut oil
1 Tablespoon ENO
1 Tablespoon water
As needed black pepper powder
Tempering
2-3 Tablespoon groundnut oil
2 Tablespoon mustard seeds
4 NOS green chili sliced
1/2 Tablespoon asafoetida
Step:1
To make base batter , add rawa , sour curd , water , sugar and salt in a large bowl , whisk well then cover and let rest for 10-15 minutes . Until then you can make the sweet corn paste and also the green chutney . You can also set the steamer after that and grease the dhokla trays with some oil

Add the sweet corn into a mixer jar along with green chili and ginger and grind into a paste

Once the batter has rest , it will thicken up as the rawa absorbs water , add the prepared sweet corn paste along with some more sweet corn , turmeric , red chili flakes , oregano and oil , mix well

Once the steamer is ready and you’ve greased the dhokla trays , add ENO into the batter along with a splash of water and mix really , then pour the batter into the trays evenly , tap them gently and add a pinch of red chili flakes , oregano and black pepper from the top

Place the trays into the steamer and steam over high flame for 20 minutes

Once the dhoklas are cooked , you can check by inserting a knife , it should come out clean

Remove the trays from the steamer and let them cool down slightly , do not cut the dhoklas while they are still steaming hot

Cut the dhokla into pieces as needed , then make the tempering

Set a tadka pan over high heat , add oil and let it get hot

Then add the mustard seeds , green chili and asafoetida , stir well and cook briefly , finally add the curry leaves and pour the tempering over the dhokla equally , garnish with some fresh coriander leaves

Ingredients For Green Chutney
1 Small bunch fresh green coriander
A handful mint
1 Small ginger
2 NOS green chili
1/2 Tablespoon cumin seeds
1 Tablespoon sugar
2-3 Tablespoon gathiya
3-4 Tablespoon lemon juice
12 NOS of ice cubes
Water a splash
Salt to taste

For the chutney , add the ingredients into a mixer jar and blend it into a fine thick chutney
