Paneer Kathi Roll Recipe

Ingredients For Dough

2 Cup refined flour

1.5 Tablespoon sugar

1 Tablespoon salt

2 Tablespoon ghee

As needed warm water

Step:1

Take a large bowl and add the refined flour in it along with sufar and salt , mix it well

Step:2

Further add ghee and mix it again , now add warm water as needed , slowly in batches and combine everything well

Step:3

Once everything comes together , transfer the dough into the kitchen platfrom and knead it well , initially the dough will be sticky with an uneven surface , stretch the dough while kneading until it become soft and non sticky kneading for 10-12 minutes

Step:4

Once the dough become smooth and non sticky , from it into a ball by tucking the the edges underneath , drizzle some oil , cover it with a damp cloth and let it rest for an hour at least . You dough is ready

Ingredients For Making Paneer

2 Tablespoon oil

1 Tablespoon Kashmiri red chili powder

1/2 Tablespoon garam masala

1/4 Black salt

1 Tablespoon ginger garlic paste

1 Tablespoon lemon juice

1/3 Cup curd

Salt to taste

250 gram paneer

1/3 Cup paneer (lacche)

1/3 Cup capsicum (julienned)

1/3 Cup tomato (julienned))

1 Pinch Red chili powder

Step:1

Take a bowl , add mustard oil and Kashmiri red chili powder , whisk it well to release its natural colour

Step:2

Further add garam masala , ginger garlic paste , lemon juice , curd , salt to taste and mix it well using a whisk , at this stage you can smoke the marinade for 3-4 minutes using live charcoal and ghee

Step:3

Further the paneer into cubes and add them to the marinade , mix well

Step:4

Now set a pan on high heat and add some oil into it for sauteing , once the oil is heated add the marinated paneer cubes and cook on high flame for 2-3 minutes , avoid frequent stirring to prevent the paneer cubes from breaking

Step:5

Once the marinade dries out and paneer gets a nice colour and onion and the remaining veggies with red chili powder , toss everything well on high flame for 1-2 minutes . Your paneer filling is ready

Ingredients For Cooking Paratha

Dough

oil for drizzling

Ghee for brushing

Refined flour for dusting

oil for cooking

Step:1

Once the dough has rested roll it into a log and cut equal portions of dough balls from it , drizzle some oil over the dough balls and let them rest for 10 minutes at least , this helps the gluten to relaxes which makes it easier to roll

Step:2

Transfer the dough ball into a greased platform and flatten it a bit using your finger further roll it into a thin chapati using a rolling pin , now brush ghee on the surface of the chapati and sprinkle some refined flour over it , now lift it from one end and start making pleats , then roll the pleated chapati from one end to other and tuck the last protion of it underneath  . You pede fpr parathas are ready

Step:3

Now dust the peda in dry refined flour and using a rolling pin roll the peda to from a chapati , make sure it is neither too thick nor too thin

Step:4

Set a pan on medium high heat and let it heat nicely , now lay the rolled out paratha on the pan and cook without oil , press the paratha using a napkin so that it cooks evenly , once it cooks slightly from one side flip and cook it the same way on the other side

Step:5

Further add some oil to the pan and cook until one side gets crispy , flip and cook it the same way on the other side until it gets crispy , make sure that you keep pressing it so that it cooks evenly . Your paratha is ready
