Ingredients For Paste
4 NOS tomato
11-12 Garlic cloves
1 Inch ginger
2 Tablespoon coriander stems
1 NOS green chili
1/5 Tablespoon Kashmiri red chili powder
1 Tablespoon coriander powder
1/2 Tablespoon cumin powder
15 NOS cashew (soaked)
Ingredients For Paneer Sauteing
1 Tablespoon oil
1 Tablespoon butter
500 Gram paneer (cubed)
Salt to taste
A pinch Kashmiri red chili powder
Final Cooking
2 Tablespoon oil
1 Tablespoon butter
1 Tablespoon cumin seed
3 NOS green cardamom
1/2 Inch cinna,on
1 NOS bay leaf
1 Tablespoon chopped garlic
1 NOS chopped green chili
3 Medium size onion chopped
1/4 Tablespoon turmeric powder
1/2 Tablespoon Kashmiri red chili powder
Salt to taste
As needed hot water
2 Tablespoon butter
A Pinch Roasted Kasuri Methi Powder
A Pinch Garam Masala
3-4 Tablespoon fresh cream
As needed fresh chopped coriander
Step:1
Add all the ingredients of the paste into a mixer grinder jar and grind it into a fine paste , make sure you soak the cashews in boiling water for 11-12 minutes before adding it , you can also boil it for 6 minutes

To saute the paneer , set a pan over high heat and once it get hot , add the oil and butter

Once the oil gets hot , add the cubed panner , salt and kashmiri red chili powder , then toss the panner over high flame for 1-3 minutes , doing this step will help the paneer to hold its structure in the gravy , once sauteed remove the paneer into a bowl and set it aside until you make the gravy

To make the gravy , heat a wok or a kadhai then add oil and butter , once the oil gets hot , add all the whole spices along with , garlic and chopped green chili , stir well and then add the onions and cook over medium high flame until the onion turn light golden brown

Once the onion turn light golden brown add turmeric powder and Kashmiri red chili powder , stir well and then add a splash of hot water , stir well and cook the masala for 3-4 minutes

Further add the prepared paste along with salt and , stir well and cook over medium high flame until the oil separates

Once the oil separates add hpt water as needed to adjust the gravy then cook for 2-3 minutes then taste the gravy and adjust the seasoning accordingly

Further add the panner , butter and all the remaining ingredients , stir well and cook only for 1-2 minutes and then finally sprinkle some more fresh coriander . Your paneer butter masala is ready , serve it hot with naan , tandoori roti or rumali roti
