Vegetable Upma Recipe

Ingredients For Roasting Rava
1 Tablespoon ghee
1 Cup upma rava
Tempering and cooking
10 NOS cashew
2 Tablespoon ghee
1 Tablespoon peanut
1 Tablespoon mustard seed
1 Tablespoon urad dal
1 Tablespoon chana dal
1 Tablespoon ginger
2 NOS green chili chopped
1 Medium size onion chopped
10-12 NOS curry leaves
5-6 NOS French beans diced
1 Small size carrot diced
1 Small size capsicum diced
1/5 Cup green peas
3 Cup hot water
Salt to taste
A pinch sugar
1/2 Tablespoon black pepper freshly crushed
Lemon juice a half
Fresh coriander chopped
1 Tablespoon ghee
Step:1
Before making the upma , make it sure that you cut the veggies into small dices . You can mix all the veggies into one bowl as they will be added together , just keep the onion separately

Set a fry pan over medium heat , once it gets slightly hot add ghee and let it get hot , then add the rava and roast it over medium to low flame for 3-4 minutes while stirring it continuously

Once roasted , transfer the rava into a bowl and set it aside to cool down . It is very important that you use upma rava and not fine rava

To fry nuts , set a kadhai over high flame then add the ghee and let it get moderately hot

Then add the cashews and peanuts , fry them over medium to low flame until they turn light golden brown , then transfer them into a bowl and set it aside

Now in the same kadhai , add mustard seeds and let them crackle , then add the urad dal and chana dal stir and cook over low flame until the dals get light golden brown

Further add the ginger , green chili and onion , stir well and cook over high flame until the onion translucent , then add the curry leaves and stir well

Then add all the veggies and cook them over a high flame for 2-3 minutes

Then measure and add the water along with salt sugar and black pepper , let the water came to a rolling boil

The perfect ratio of rava to water for the perfect upma is 1:3 . So 1 cup of rava and 3 cups of water use the same cup measure to measure both

Then add the roasted rava while stirring it continuously to avoid lumps , cook over medium high flame while stirring continuously until there is no separate water visible

Then cover and cook over low flame 4-5 minutes , open the lid and stir it once after 3 minutes

Once cooked over low flame , remove the lid and stir the upma , then put the lid back on , switch off the flame and let it rest for 5 minutes , this step is very important

Next remove the lid and add the fried nuts , lemon juice , fresh coriander and ghee , stir well . Your perfect , melt in the mouth vegetable upma is ready , serve it hot with some coconut chutney and sambar
